Chicken sandos
Use leftovers from our garlic & parmesan breaded chicken with quick giardiniera to make this easy sandwich. It's an ideal lunch for busy workdays

Ingredients
- 100g white cabbage , finely shredded
- 50g leftover giardiniera (see recipe below)
- 50g mayonnaise
- 2crusty rolls or 4 thick slices of bloomer
- 1leftover garlic & parmesan breaded chicken breast (see recipe below)
Instructions
Step 1
Mix the cabbage with a splash of the leftover giardiniera pickling liquid and massage in using your hands, along with a pinch of salt and pepper. Set aside. Roughly chop the remaining giardiniera and stir through the mayonnaise, adding another splash of the leftover pickling liquid. Season to taste.Step 2
Spread some of the mayonnaise over the slices of the bread. Fill your sandwiches with the remaining chicken breast, cut into slices, with more mayo on top, then a handful of the cabbage.
