Tempura Shrimp
Here's an easy recipe to make tempura shrimp, or Ebiten. Ebi means shrimp and ten is from tempura. Serve with a hot mustard or sweet & sour sauce.

Ingredients
- 12shrimp (large)
- 1egg
- 1cup ice water
- 1quart vegetable oil (for frying)
- 1cup all-purpose flour ( sifted , for dusting)

Step 1
Gather the ingredients.Step 2
Remove heads and shells from shrimp without removing tails. Devein the shrimps .Step 3
Make 2 or 3 incisions on the stomach side of the shrimp to straighten them. Lightly press the back of shrimp to straighten.Step 4
Remove the dirt from the tails of shrimp, using a knife.Step 5
Dry shrimp on paper towels.Step 6
Beat an egg in a bowl. Add ice water in the bowl.Step 7
Add sifted flour in the bowl and mix lightly.Step 8
Heat the oil to 340 F to 350 F.Step 9
Lightly flour shrimp.Step 10
Pick the tail and dip shrimp in the tempura batter and coat the shrimp completely.Step 11
Immediately deep-fry the shrimp until crisp.Step 12
Serve and enjoy.
