- For the Meatballs
- 1pound minced pork
- 1large onion, peeled and finely chopped
- 25grams/1 ounce fresh breadcrumbs (or 30 grams/2 ounces dried breadcrumbs)
- 1egg, lightly beaten
- 1teaspoon cumin
- 1handful flat-leaf parsley, finely chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- 2tablespoons olive oil
- For the Sun-Dried Tomato Sauce
- 1tablespoon olive oil
- 1large onion, chopped
- 1clove garlic, crushed
- 2(14-ounce) cans crushed tomatoes
- 8sun-dried tomatoes , finely sliced
- 1teaspoon sweet paprika
- 1cup red wine
- 1handful parsley, roughly chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- Optional: freshly grated parmesan cheese, to serve
