Roasted Purple Potatoes With Cilantro and Garlic

Ingredients
- 2 ½pounds purple potatoes
- 3cloves garlic (minced)
- 2tablespoons chopped fresh cilantro or parsley
- ¼cup extra-virgin olive oil
- ¾teaspoon kosher salt
- ⅛teaspoon ground black pepper
- 2teaspoons fresh leaf thyme (or a generous 1/2 teaspoon dried leaf thyme)

Heat the oven to 400 F. Brush a large rimmed baking pan or roasting pan with olive oil or spray the pan with nonstick cooking spray .Step 3
Scrub the potatoes well and peel, if desired. Cut the potatoes into 1-inch pieces.Step 4
