Tex-Mex Macaroni and Black Bean Salad
This macaroni salad is packed with flavor with tomatoes, peppers, black beans, corn, and cilantro that are mixed with a creamy Tex-Mex dressing.

Ingredients
- 6ounces macaroni (about 1 1/2 cups uncooked)
- 1 ½cups seeded and diced plum tomatoes
- ½cup diced red bell pepper
- ½cup diced red onion
- ½cup diced peeled cucumber
- 1can (about 15 ounces) black beans (drained and rinsed)
- 1cup cooked corn kernels (cooled and drained)
- 2tablespoons chopped fresh cilantro
- 1clove garlic (minced)
- For the Dressing:
- ½cup mayonnaise
- 3tablespoons fresh lime juice
- 2tablespoons red wine vinegar
- 2tablespoons extra virgin olive oil
- 2teaspoons chili powder
- ½teaspoon ground cumin
- ½teaspoon salt
- ⅛teaspoon ground black pepper, or to taste
Instructions
Step 1
Cook macaroni in boiling salted water following package directions. Drain in a colander and rinse under cold water.Step 2
In a large bowl, combine the cooled macaroni, tomatoes, bell pepper, onion, cucumber, beans, corn, cilantro, and garlic and toss to blend ingredients.Step 3
In another bowl, combine the dressing ingredients, stirring to blend. Pour over the macaroni mixture and gently stir to blend thoroughly. Chill and serve.Step 4
