Ingredients
- 100 gsugar
- 2 tbsplemon juice
- ½ dlwater
- 2pears
- 25 gbutter
- 200 gwhite flour
- 80 gground cane sugar
- 50 gcocoa powder
- 2 tspbaking powder
- ¼ tspsalt
- 1 dlmilk
- 1 dlsparkling mineral water
- 125 gbutter
- 2egg yolks
- 2egg whites
- 1 pinchsalt
- clarified butter
Instructions
Step 1
Heat the sugar in a wide pan without stirring. Reduce the heat and simmer, swirling the pan occasionally until a light brown caramel has formed. Add the lemon juice and water, cover and simmer until the caramel has dissolved. Add the pears, cover and simmer over a low heat for approx. 5 mins., remove the lid, reduce to a syrupy consistency for approx. 3 mins. Remove the pan from the heat, stir in the butter.Step 2
Empty the flour into a bowl along with all the other ingredients up to and including the salt, mix and make a well in the centre. Combine the milk, water, butter and egg yolks, pour into the flour, mix using the whisk on a mixer. Beat the egg whites with the salt until stiff, carefully fold into the batter.Step 3
Heat up the waffle iron. Brush with a little clarified butter. Spoon approx. 3 heaped tablespoons of batter onto the waffle iron for each waffle, cook the waffles for approx. 5 mins., remove and keep warm. Repeat these steps with the remainder of the batter. Serve the waffles with the pears and syrup.
