Champagne White Chocolate Truffles

Ingredients
- 12ounces white chocolate (chopped)
- ¼cup heavy cream
- 2ounces butter (softened to room temperature)
- ¼cup Champagne
- 1pound white chocolate candy coating
- Optional: edible gold leaf (for decorating)

Gather the ingredients.Step 2
In a medium heat-safe bowl, place the chopped white chocolate. Line a baking sheet with foil or parchment.Step 3
In a small saucepan, pour the heavy cream and bring it to a boil over medium heat.Step 4
Once boiling, immediately pour the hot cream over the chopped chocolate.Step 5
Let the cream soften the chocolate for 1 minute, then whisk everything together until the chocolate is melted . The mixture will be very thick.Step 6
Pour the Champagne into the white chocolate mixture and whisk until it is incorporated.Step 7
Add the butter and whisk until smooth.Step 8
Press a piece of plastic wrap on top of the white chocolate, and refrigerate until it is firm enough to scoop.Step 9
Once firm, use a candy scoop or a teaspoon to form small balls. Dust your hands with confectioners' sugar, and roll the balls between your hands to get them perfectly round.Step 10
Melt the white chocolate candy coating.Step 11
Once completely melted and smooth, use a fork or dipping tools to dip each truffle in the white chocolate coating, and place it on the lined baking sheet.Step 12
If using the gold leaf, apply a small amount using a brush or tweezers to each truffle just after dipping, while the chocolate is still tacky.
