Ingredients
- 5 tbspwhite wine vinegar
- 6 tbspolive oil
- 3anchovy fillets
- 1garlic clove
- ¼ tspsea salt
- a littlepepper
- 350 gbeans
- salted water
- 400 gnew potatoes
- 2 tinpink tuna in brine
- 3tomatoes
- 1yellow pepper
- 1red onion
- 80 gblack olives
- 1 tbspbasil
- 2hard-boiled eggs
Instructions
Step 1
Mix the vinegar with all the other ingredients up to and including the pepper.Step 2
Cook the beans in salted water for approx. 5 mins. Add the potatoes, cook for approx. 10 mins. until soft, drain, allow to cool slightly, mix with the dressing.Step 3
Add the tuna to the vegetables along with all the other ingredients up to and including the basil, mix carefully.Step 4
Plate up the salad with the eggs.
