Meatloaf With Mixed Vegetables
This meatloaf recipe is made with ground beef, bread crumbs, and frozen mixed vegetables, for an interesting and delicious main dish.
- Serves: 8 persons
- ¾cup evaporated milk
- 2cups soft bread cubes
- ¼cup chopped onion
- 2pounds lean ground beef
- 1 ½teaspoons kosher salt
- 2large eggs, beaten
- 1teaspoon dry mustard
- 1 ½cups (10 or 12 ounces) frozen mixed vegetables, steamed according to package
Step 1Gather the ingredients.
Step 2Preheat the oven to 350 F.
Step 3Line a rimmed baking sheet or baking pan with foil.
Step 4In a large bowl, pour milk over bread cubes and let stand until milk is absorbed.
Step 5To the bread and milk mixture add the chopped onion , ground beef, salt, eggs, and dry mustard; blend well.
Step 6Stir in vegetables.
Step 7Place the meat mixture in the prepared baking pan and shape it into an oblong loaf. Alternatively, pack gently into a large loaf pan.
Step 8Bake the meatloaf in a preheated oven for 1 1/2 hours.
Step 9Let stand for 5 minutes before turning out of pan and slicing.
