Christmas Stollen Recipe
Classic Stollen—a lovely treat for both Christmas and Boxing Day—is rich and bursting with flavor. It's also easy to make, though it does take some time.

Ingredients
- For the Fruit Mixture
- ½cup/60 g sultanas or golden raisins
- ¼cup/15 g flaked almonds
- 1tablespoon/15 g candied mixed peel
- ¼cup dried cranberries
- I medium orange (zested and juiced)
- 1medium lemon (zested)
- 1tablespoon rum
- For the Dough
- 3g butter (softened)
- ¼teaspoon salt
- ¼teaspoon ground allspice
- 1 ½tablespoon/20 g caster sugar
- ½teaspoon vanilla extract
- 1egg (beaten)
- ¾cups/170 g strong white flour
- 1packet fast-action dried yeast
- 3 ½ounces/100 g marzipan
- For the First Glaze
- ⅔cup/150 g butter (salted or unsalted, and melted)
- ¼cup/50 g caster sugar
- For the Second Glaze
- ¼cup smooth apricot jam
- 3tablespoons/45 g butter
- ¼cup/30 g caster sugar
- 1tablespoon whole milk
- Garnish: confectioner's sugar (for dusting)
