Air Fryer Potato Chips

Air fryer potato chips turn out incredibly crispy without deep frying. The key is making sure your potato slices are as dry as possible before frying.

    Gather the ingredients.
  2. Step 2

    Scrub the potatoes thoroughly. There is no need to peel the potatoes.  Use a mandolin at the 1/8-inch setting or a vegetable peeler to slice the potatoes very thinly. You can slice lengthwise for long chips or crosswise for a more classic chip shape.

    As you slice the potatoes, immediately submerge them in a bowl of very cold water. Let them sit in the cold water for at least 20 minutes. This removes the starch from the potatoes so they can crisp properly. It also prevents oxidation.

    Remove the potatoes from the cold water. Rinse with more cold water, then place in a single layer on a paper towel-lined baking sheet. Pat dry with more paper towels until they are as dry as possible.

    Add the dried potato slices to a large bowl. Drizzle with the oil or cooking spray and toss to coat. Preheat the air fryer to 350 F.
  6. Step 6

    Add the potato slices to the basket of the air fryer in one even layer without too much overlap. Air fry at 350 F for 10 minutes.

    Separate the potato slices and flip them if needed. If the potatoes aren't golden and crisp, raise the air fryer temperature to 400 F and continue air frying until crispy on both sides and light golden brown, 3 to 5 minutes more. Remove from the air fryer and sprinkle with salt immediately. Repeat again with any remaining potato slices.
