Chopped Salad With Ham and Balsamic Vinaigrette

Ingredients
- For the salad:
- 1tablespoon butter (or vegetable oil)
- 1cup ham (diced)
- 1large head romaine lettuce (chopped)
- ⅓cup red onion (diced)
- ¼cup radish (diced)
- ½cup toasted pecans (or roasted peanuts, chopped)
- ½cup cooked chickpeas
- 1medium cucumber (peeled and diced)
- 2small to medium tomatoes (diced)
- 1cup Havarti, Monterey Jack (or mild cheddar cheese, diced)
- 1tablespoon fresh parsley (chopped)
- Optional for serving: tortilla chips
- For the vinaigrette:
- ¼cup balsamic vinegar
- 1teaspoon honey Dijon mustard
- ½cup good-quality olive oil
- Salt (to taste)
- Freshly ground pepper (to taste)
Instructions
Step 1
Heat the butter or vegetable oil in a skillet over medium heat. Add the diced ham and cook, stirring, until browned. Remove the pan and allow to cool.Step 2
In a large bowl combine the cooled ham with the chopped lettuce, onion, radish, pecans, chickpeas , cucumber, tomato, cheese, and parsley; toss to mix well.Step 3
In a jar or container, combine the balsamic vinegar and mustard. Gradually whisk in the olive oil and season with salt and pepper to taste.Step 4
Arrange the salad on individual salad plates on a bed of tortilla chips, if desired, with the vinaigrette on the side.
