Instructions

  1. Step 1

    Gather the ingredients.
  2. Step 2

Preheat oven to 425 F. In a blender, place the eggs, milk, and salt.
  3. Step 3

Carefully add the flour to the blender.
  4. Step 4

Cover and pulse several times, using a plastic spatula to scrape down the sides. Blend until completely mixed.
  5. Step 5

Transfer the batter to a large measuring cup and refrigerate for at least 30 minutes. If possible, refrigerate overnight for best results.
  6. Step 6

Brush the beef drippings or vegetable oil into the bottom of a 12-cup muffin tin. It should come to about 1 teaspoon per muffin cup. Place the muffin tin into the oven for 15 minutes or until the drippings are beginning to smoke.
  7. Step 7

Working very quickly and carefully, bring the tin out of the oven and pour the batter into each of the muffin cups until 3/4 full. Place the muffin tin back into the oven in the middle rack.
  8. Step 8

Bake for 20 minutes until the puddings have risen and are browned. Remove from the oven and serve the puddings immediately.
  9. Step 9

    Enjoy!
