Seafood a la King With Tilapia, Shrimp, and Crab
The familiar version is made with chicken, but seafood a la king is just as delicious, with tilapia, shrimp, and crab in a delicate, creamy sauce.

Ingredients
- 3tablespoons butter
- 1cup chopped onion
- 3tablespoons all-purpose flour
- 2cups milk
- ½teaspoon salt
- ¼teaspoon white pepper
- ⅛teaspoon ground nutmeg
- Optional: Pinch of cayenne pepper
- 12ounces tilapia fillets (cut into 2-inch pieces)
- 6to 8-ounces peeled and deveined cooked shrimp (medium to extra large are best)
- 4ounces imitation crab
- 1cup (or more) frozen baby peas

Gather the ingredients.Step 2
In a large skillet, melt the butter over medium heat.Step 3
Add the onions and cook until softened.Step 4
Add the flour and cook, stirring, about 2 to 3 minutes.Step 5
Add the milk a bit at a time (start with a couple of tablespoons and increase as you go along), whisking or stirring well to incorporate.Step 6
Add the seasonings and cook, stirring every so often, for 2 minutes.Step 7
Add the tilapia pieces.Step 8
Spoon the sauce over the fish and cook for 5 minutes, stirring very gently once or twice.Step 9
Add the shrimp, crab, and peas. Cook a few more minutes until heated through.Step 10
Serve over rice, orzo pasta, grits, biscuits, or puff pastry squares or shells.
