Buttery Brioche Hamburger Buns
These rich brioche buns are made with a generous amount of butter and eggs. They make great homemade hamburger buns or can be served with a salad.

- For the Starter:
- ⅔cup milk (lukewarm, about 85 F)
- 2 ¼teaspoons active dry yeast
- ¾cup (3 1/4 ounces) all-purpose flour
- 3tablespoons sugar
- For the Dough:
- 3cups plus 2 tablespoons (14 ounces) all-purpose flour
- 1 ½teaspoons salt
- 4large eggs (lightly beaten)
- 8tablespoons (1 stick) unsalted butter (at room temperature)
- 1teaspoon olive oil or vegetable oil for bowl
- 1tablespoon cornmeal for dusting
- For the Egg Wash:
- 1large egg
- 1tablespoon water
- For the Optional Topping:
- Sesame seeds or poppy seeds
