Zucchini Bread with Dried Fruits and Nuts
Fall is approaching and this recipe will have your taste buds dancing for joy!
- Serves: 2 persons
- 3medium zucchini, or as needed
- 1½ cups white sugar
- ½cup vegetable oil
- 3large eggs
- 1cup sour cream
- 1teaspoon orange extract
- 1cup raisins
- 1cup dried cranberries
- 1cup chopped dried apricots
- 1cup finely chopped pecans
- 3cups all-purpose flour
- 1teaspoon baking soda
- ¼teaspoon baking powder
Step 1Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9x5-inch loaf pans.
Step 2Shred zucchini and squeeze as much moisture out as possible. Continue until you have 2 cups squeezed, dried zucchini.
Step 3Beat sugar, vegetable oil, and eggs together in a large bowl. Blend in zucchini, sour cream, and orange extract. Stir in raisings, cranberries, apricots, and pecans. Mix in flour, baking powder, and baking soda. Divide batter evenly between the prepared loaf pans.
Step 4Bake in the preheated oven until a toothpick inserted in the centers comes out clean, about 60 minutes.
