    Gather the ingredients.
  2. Step 2

    Cut the goat cheese into 1-inch thick discs or roll pieces of the goat cheese into small balls.
  3. Step 3

    Combine the olive oil and thyme, chives, parsley and fennel seeds in a glass jar or a bowl with a lid.
  4. Step 4

    Drop or gently set the goat cheeses into the olive oil.
  5. Step 5

    Let the cheese marinate in the refrigerator or on the counter for at least one hour, preferably longer. If marinating for longer than 1 hour, put the cheese in the refrigerator.

    Marinated goat cheese can be eaten cold or the cheese and olive oil can be heated together in a 375 F oven for 8 to 10 minutes, or until warm.
  7. Step 7

    Sprinkle sea salt over the cheese before serving. Serve marinated goat cheese with a good loaf of bread.
