Raisin Amber Pie
A rich buttermilk custard with raisins topped with meringue.

Ingredients
- 4egg yolks
- 1cup white sugar
- 1tablespoon all-purpose flour
- 1teaspoon ground cinnamon
- 1teaspoon ground allspice
- 1teaspoon salt
- 1cup buttermilk
- 1tablespoon melted butter
- 1cup raisins
- 1(9 inch) unbaked pie crust
- 2egg whites
Instructions
Step 1
Preheat oven to 375 degrees F (190 degrees C.)Step 2
In a large bowl, beat egg yolks and sugar until creamy. Blend in flour, cinnamon, allspice and salt. Beat in buttermilk and melted butter. Stir in raisins. Pour filling into pie shell.Step 3
Bake in the preheated oven for 30 to 40 minutes, or until filling is set.Step 4
In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Spread meringue over pie, covering completely. Bake or 8 to 10 minutes, until lightly browned.
