Raisin Spice Cake Recipe

Ingredients
- 2cups raisins
- 1 ½cups water
- ½cup shortening
- 2cups light brown sugar (firmly packed)
- 3cups all-purpose flour
- 1 ½teaspoons ground cinnamon
- ½teaspoon ground cloves
- ½teaspoon ground nutmeg
- ½teaspoon salt
- 1cup sour milk
- 1teaspoon baking soda
- 3eggs (beaten)
- ¼cup confectioners' sugar
Instructions
Step 1
In a saucepan, combine raisins and water.Step 2
Cook until raisins are plump. Reserving 2/3 cup of cooking liquid, drain and set raisins aside.Step 3
In a bowl, cream shortening, and sugar.Step 4
Combine flour, cinnamon, cloves, nutmeg, and salt; set aside.Step 5
In a separate bowl, combine milk, soda, eggs, and reserved cooking liquid.Step 6
Add dry ingredients alternately with the milk mixture to creamed mixture.Step 7
Stir in the cooked raisins.Step 8
Pour into a greased 13x9x2-inch baking pan. Bake at 350 F for 35 to 40 minutes or until cake tests are done.Step 9
Cool raisin cake on a wire rack.Step 10
Just before serving, sprinkle with confectioners sugar.
