General Tso Fried Chicken Sandwich with Crunchy Asian Slaw Recipe

Ingredients
- For The Fried Chicken:
- 1chicken breast, cut in half and pounded out
- 1egg
- 2cups all purpose flour
- 1tablespoon cornstarch
- 1teaspoon salt
- 3cups peanut oil
- For The General Tso Sauce:
- ¼cup chicken stock
- 2tablespoon sugar
- 2tablespoon rice wine vinegar
- 1tablespoon hoisin sauce
- 1tablespoon sesame oil
- 1tablespoon Sriracha
- 1tablespoon dark soy sauce
- 1teaspoon cornstarch
- 1tablespoon oil
- 1scallion, chopped
- 1nub ginger, diced
- 1garlic, minced
- a handfull toasted sesame seeds
- For The Asian Slaw:
- ⅓cup shredded purple cabbage
- 2tbsp. shredded carrot
- 1tablespoon mint, chopped
- 1tablespoon cilantro, chopped
- 1tablespoon thai basil, chopped
- ½tablespoon sugar
- 1teaspoon ground ginger
- 1tablespoon kewpie mayo
- 1tablespoon rice wine vinegar
- 1teaspoon sesame oil
- For the Whole Sandwich:
- 1brioche bun, toasted
- 1general two fried chicken breast
- ¼cup asian slaw
- ½tablespoon kewpie mayo
Instructions
Step 1
Heat oil to 375 F.Step 2
Beat egg in a bowl. Mix flour, cornstarch, and salt in a bowl.Step 3
Dunk chicken in egg mixture, then flour mixture, then add to hot oil and fry until golden brown and chicken cooked through. Set aside on a paper towel. --FOR THE GENERAL TSO SAUCE--Step 4
Whisk together chicken stock, sugar, rice wine vinegar, hoisin, sesame oil, Sriracha, dark soy sauce and cornstarch in a medium sized bowl. Set aside.Step 5
Add oil to a pan and add scallion, ginger, and garlic and cook for 1-2 minutes or until fragrant. Add mixture from step one and bring to a boil.Step 6
Let the sauce cook for a few minutes until thickened. Add fried chicken and toss to coat. Sprinkle with toasted sesame seeds and set aside. --FOR THE ASIAN SLAW--Step 7
Mix all ingredients in a large bowl and set aside. --FOR THE SANDWICH--Step 8
Toast buns and place the General Tso fried chicken on top of the bottom bun. Next, add Asian slaw, a drizzle of mayo and the top bun. Serve immediately.
