Instant Pot Spanish Rice
Spanish rice can be made easily and effortlessly by using the Instant Pot. The flavorful rice is an excellent side dish for chicken or fish.
- Serves: 4 persons
- 1cup long-grain white rice
- 1tablespoon vegetable oil
- 2cloves garlic (minced)
- 1fresh jalapeño (seeded and finely diced)
- 1cup vegetable broth (or chicken broth)
- 1teaspoon chili powder
- 1teaspoon smoked paprika
- ½teaspoon cumin
- ½teaspoon salt
- 1cup fresh salsa (chunky-style)
- Garnish: fresh cilantro (chopped)
Step 1Gather the ingredients.
Step 2Place the rice in a fine mesh colander and rinse and drain well.
Step 3Turn on the Instant Pot to the sauté setting. Add the oil, garlic, and jalapeno. Sauté until fragrant, about 1 minute.
Step 4Turn the sauté setting off. Add the broth, chili powder, smoked paprika, cumin, and salt.
Step 5Add the rice and stir to combine.
Step 6Add the salsa on top but do not stir. Close and lock the lid.
Step 7Set the Instant Pot to high pressure for 5 minutes. When 5 minutes is up and the Instant Pot beeps, allow it to sit for an additional 10 minutes while the pressure begins to release naturally. Then, open the valve and release any remaining pressure manually.
Step 8Fluff the rice with a fork.
Step 9Garnish with fresh cilantro and serve immediately.
