Chocolate Whoopie Pies
These classic whoopie pies are sure to have everyone raving. Creamy marshmallow filling is sandwiched between soft, cakey chocolate cookies for the perfect bite.
- Serves: 12 persons
- For the Cookies :
- 2 ¼cups flour (10 ounces)
- ½cup unsweetened cocoa powder
- 1 ½teaspoons baking soda
- ½teaspoon kosher salt
- ½cup shortening (4 ounces)
- 1cup granulated sugar
- 1large egg
- 1 ½teaspoons vanilla extract
- 1cup buttermilk
- For the Filling :
- 1cup shortening (8 ounces)
- 2cups confectioners' sugar (about 7 ounces)
- 7 ½ounces Marshmallow Fluff (or similar marshmallow in a jar)
- 2teaspoons vanilla extract
- Dash salt
Step 1Gather the ingredients.
Step 2Sift the flour, cocoa powder, baking soda, and salt together into a bowl. Set aside.
Step 3In the mixing bowl of an electric mixer, beat the shortening and granulated sugar together for about 3 minutes, or until light and fluffy.
Step 4Add the egg and vanilla, then continue to beat until blended.
Step 5Add about one-third each of the flour mixture and buttermilk; beat until blended. Add another one-third of the flour mixture and the remaining buttermilk; beat until blended. Add the remaining flour mixture and beat until blended. Cover the bowl, then chill the batter for 1 to 2 hours.
Step 6Preheat the oven to 350 F and line 2 large baking sheets with parchment paper. Scoop mounds of batter—about 1 1/2 tablespoons for each cookie—onto the parchment paper, leaving about 2 inches between them.
Step 7Bake the cookies for about 12 minutes, or just until firm. Remove the pan to a rack and let the cookies cool while you prepare the filling. Prepare the Marshmallow Filling and Assemble
Step 8Gather the filling ingredients.
Step 9In the mixing bowl of an electric mixer, beat the shortening and confectioners' sugar until light and fluffy.
Step 10Add the marshmallow fluff, vanilla extract, and salt to the bowl; beat until fluffy.
Step 11To assemble the whoopie pies, spread or pipe the marshmallow filling onto the flat side of a cookie. Top with another cookie, flat-side down. Repeat with the remaining cookies and filling.
