- 50 gsugar
- ½ dlwater
- 1 dlchampagne
Step 1Rub the quince clean with a towel, peel, quarter, core and cut into cubes. Mix the quince and sugar in a pan, pour in the water, cover and simmer for approx. 20 mins. until soft. Leave the quince to cool, puree until smooth.
Step 2Spoon 3 cl of the quince puree into a champagne glass, top up with champagne, serve immediately.
