Green Beans with Tofu and Tahini Dressing
In Japan this is known as "shira-ae" and is made with ground roasted white sesame seeds. I have subbed tahini for that! Super delicious, amazing umami, and sooo good for you!

Ingredients
- ¾pound fresh green beans, trimmed
- ¼(12 ounce) package firm tofu
- 1tablespoon tahini
- 1teaspoon white miso paste
- 1½ teaspoons soy sauce
- ½teaspoon white sugar
- ⅛teaspoon salt
Instructions
Step 1
Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender, 5 to 7 minutes. Drain, allow to cool slightly, and slice on the diagonal. Transfer to a bowl.Step 2
Mash tofu with a fork as much as possible. Mix in tahini and miso paste. Season with soy sauce, sugar, and salt. Blend with an immersion blender until it is the consistency of yogurt.Step 3
Pour dressing over green beans and mix to combine.
