Haepari Naengchae Recipe (Jellyfish Salad)
This jellyfish salad is a fresh, delicious, and pretty impressive salad that is easy to make at home. It's colorful and full of different textures.
- Serves: 4 persons
- 4oz salted jellyfish, shredded
- 4oz imitation crabmeat, torn into pieces
- 6oz Japanese cucumber or Kirby, seeded and julienned
- ½carrot julienned
- 3tablespoons rice vinegar
- 1tablespoon lemon juice
- 3tablespoons sugar
- 1tablespoon spicy mustard
- 1teaspoon salt
- 1tablespoon minced garlic
- 1tablespoon sesame seeds, toasted
Step 1Soak the jellyfish in cold water for about 30 minutes to remove the salt.
Step 2After 30 minutes, remove and put into the colander to drain.
Step 3Pour very hot water over the jellyfish in the colander.
Step 4Immediately dunk jellyfish in ice water.
Step 5Drain again in the colander.
Step 6Pat dry briefly and add to a mixing bowl.
Step 7Add crabmeat , cucumber, and carrots and season with cucumber, lemon juice, vinegar, sugar, mustard, salt, garlic, and sesame seeds.
Step 8Toss well to combine. Note: For variety, you can colorful vegetables to make this even prettier- thinly sliced red, yellow, and orange peppers and red cabbage make for an impressive rainbow salad.
