Moroccan beghrir are spongy semolina pancakes which are cooked only on one side. They are easy to make and have a unique honeycomb appearance.

Ingredients
- Conventional Measures:
- 1 ½cups fine semolina or durum flour
- ¾cup all-purpose flour
- 1teaspoon kosher salt
- 1teaspoon sugar
- 2teaspoon baking powder
- 3cups plus 2 tablespoons lukewarm water
- 1tablespoon yeast
- Traditional Moroccan Measures:
- 2glasses (to the brim) lukewarm water
- 1level glass fine semolina
- ½glass all-purpose flour
- 1teaspoon kosher salt
- 1teaspoon sugar
- 2teaspoons baking powder
- 1tablespoon yeast
