A Unique Oatmeal Soufflé
This baked oatmeal soufflé is different from your typical baked oatmeal recipe: egg whites are whipped and baked in to create a fluffy oatmeal soufflé.

Ingredients
- Cooking spray, or butter for greasing
- 1cup milk
- 1tablespoon butter
- ¾cup rolled oats
- ¼cup plain Greek yogurt
- ⅓cup brown sugar
- 3large eggs, separated
- ½teaspoon ground cinnamon
- ¼teaspoon salt
- ¼cup demerara sugar, turbinado sugar

Step 1
Gather the ingredients. Preheat the oven to 325 F. Butter 6 ramekins, or spray with cooking spray.Step 2
Place milk and butter in a small saucepan, and bring to just boiling. Add rolled oats, and reduce heat to medium-low. Cook oatmeal, stirring occasionally, until nearly all the liquid is absorbed.Step 3
Remove oatmeal from heat. Stir in the brown sugar, Greek yogurt, egg yolks, cinnamon, and salt.Step 4
In a clean bowl, beat egg whites until stiff peaks form. Gently fold into oatmeal mixture. Spoon the oatmeal soufflé mixture into prepared ramekins. Sprinkle with demerara sugar. Bake 12 to 20 minutes, until golden and puffy. The baking time will depend on the size and shape of the ramekins.
