Easy Plain Buttermilk Muffins
Great for beginners, this easy recipe for plain buttermilk muffins is a great addition to the breakfast table. Kids can also help with mixing and baking.
- Serves: 12 persons
- 2cups flour (all-purpose)
- 3teaspoons baking powder
- ½teaspoon salt
- 3tablespoons sugar
- 3tablespoons vegetable oil
- 1teaspoon pure vanilla extract
- 1large egg (lightly beaten)
- 1cup buttermilk
Step 1Preheat oven to 400 F.
Step 2Grease a 12-cup muffin tin.
Step 3In a medium bowl, combine the flour, baking powder, salt, and sugar.
Step 4In a small bowl, mix together the vegetable oil, vanilla, egg, and buttermilk.
Step 5Add liquid ingredients to the bowl of dry ingredients. Quickly mix the ingredients altogether, making sure not to over mix.
Step 6Fill each muffin cup two-thirds with the batter.
Step 7Bake at 400 F for 20 minutes or until done. Let the muffins cool in the muffin tin for about 10 minutes. Lift muffins out with a spoon and serve with butter.
