- 2cups flour (all-purpose)
- 3teaspoons baking powder
- ½teaspoon salt
- 3tablespoons sugar
- 3tablespoons vegetable oil
- 1teaspoon pure vanilla extract
- 1large egg (lightly beaten)
- 1cup buttermilk

Preheat oven to 400 F.Step 2
Grease a 12-cup muffin tin.Step 3
In a medium bowl, combine the flour, baking powder, salt, and sugar.Step 4
In a small bowl, mix together the vegetable oil, vanilla, egg, and buttermilk.Step 5
Add liquid ingredients to the bowl of dry ingredients. Quickly mix the ingredients altogether, making sure not to over mix.Step 6
Fill each muffin cup two-thirds with the batter.Step 7
Bake at 400 F for 20 minutes or until done. Let the muffins cool in the muffin tin for about 10 minutes. Lift muffins out with a spoon and serve with butter.
