Four Happiness Pork
Learn how to make the classic Shanghai specialty Four Happiness Pork with this simple recipe that boils the pork and then braises it in seasonings.
- Serves: 6 persons
- 1 ½pounds lean pork
- 1cup water
- 2tablespoons sherry
- 6tablespoons dark soy sauce
- 2slices ginger
- 2tablespoons sugar
Step 1Put pork in boiling water. Boil 1 minute. Drain. Rinse in cold water.
Step 2Cut pork into 2-inch cubes.
Step 3Put pork and 1 cup water in an earthenware or any other heavy pot. Bring water to boil. Add sherry, soy sauce, ginger , and scallion.
Step 4Cover pot tightly. Simmer over very low heat 2 hours.
Step 5Add sugar. Bring to high heat. Baste until gravy coats the meat.
Step 6May be prepared in advance. May be frozen. Reheat before serving.
