Elvis sandwich

Elvis sandwich

BBC Good Food · · 1 servings · Medium

Eat like ‘the King’ with this indulgent sandwich where salty bacon, banana and peanut butter are generously stacked between white bread

Original recipe by bbcgoodfood.com

Ingredients

  • 3 slices of smoked streaky bacon
  • 2 thick slices of white bread
  • 2 tbsp salted butter , softened
  • 2 heaped tbsp dark roast crunchy peanut butter (we used Manilife)
  • 1 banana , sliced on an angle

Steps

  1. Lay the slices of streaky bacon across the bottom of a small frying pan, then turn the heat up to low. Cook slowly until very crisp, and all the fat has collected at the bottom of the pan. Remove from the pan and set aside.
  2. Meanwhile, spread the outside of the bread with the butter, then spread the peanut butter on the inside of both slices. Lay one slice of the buttered bread in the pan so the butter is touching the bacon fat, adding a small piece of butter to the pan if the bacon wasn’t very fatty. Lay the banana on top and the bacon on top of that. Sandwich the remaining piece of bread on top.
  3. Cook on medium heat for 2-3 mins on each side until golden. Lift out and drain on kitchen paper, then slice in half and enjoy.
