Blueberry smoothie recipe
Make a quick and simple blueberry smoothie with yogurt, banana and apple juice for busy mornings. You can easily make it vegan by using coconut yogurt
- Serves: 1 person
- 175g blueberries
- 1small banana, sliced
- 1tbsp natural or Greek yogurt
- 100ml apple juice, chilled
- 3-4 mint leaves (optional), plus extra to garnish
Step 1Put the blueberries, banana, yogurt, apple juice and mint, if using, in a blender and blitz until smooth. Add a splash of water if it seems too thick.
Step 2Pour the smoothie into a tall glass with a glass straw to serve. Garnish with a sprig of mint, if you like.
