Cuban White Bean Soup

Ingredients
- 1pound dried white beans (soaked overnight)
- 2 ½quarts of water
- 2bay leaves
- 6ounces salt pork
- 2ham hocks
- ¼cup olive oil
- 4cloves garlic (minced)
- 1medium white onion (minced)
- 1teaspoon ground cumin
- 2teaspoons dried oregano
- Salt to taste
- Freshly ground black pepper to taste

Gather the ingredients.Step 2
Drain and rinse white beans that have been soaking overnight.Step 3
Place beans, water, bay leaves, salt pork, and ham hocks in a soup pot and bring to a boil over medium heat.Step 4
Reduce heat to low, cover and simmer for 1 1/2 hours.Step 5
Remove salt pork and discard.Step 6
Remove ham hocks and shred meat from bones.Step 7
Put shredded meat back into soup pot.Step 8
In a skillet, heat olive oil over medium heat. Sauté onions and garlic until soft and translucent.Step 9
Add onions to soup pot, along with cumin, oregano, salt, and pepper. Simmer for 15 minutes.
