Ingredients
- 3–4 lbs beef brisket (first or flat cut)
- 3tablespoons oil
- 10cups thinly sliced onions
- 4cloves garlic (smashed)
- 1cup tomato purée
- 1cup beef stock
- ¼cup red wine vinegar
- 2tablespoons brown sugar
- ½teaspoon dried thyme
- 1tablespoon Worcestershire sauce
- 1teaspoon salt
- 1teaspoon black pepper
- Additional salt and pepper for seasoning

Season the brisket with salt and pepper.Step 2
Heat a large skillet with oil on medium-high heat and then add the brisket, browning on both sides.Step 3
Place the browned brisket into a slow cooker.Step 4
Put the sliced onions and garlic in a skillet and sauté on medium heat until onions are caramelized about 20 minutes.Step 5
In a bowl, stir together the tomato purée, stock, vinegar, sugar, thyme, Worcestershire sauce, along with additional salt and pepper if needed. Add the mixture to the skillet.Step 6
Pour the onion mixture over the brisket, and place the lid on the slow cooker. Cook on high for 5 to 5-1/2 hours.Step 7
Remove the brisket and thinly slice against the grain.Step 8
Serve with the sauce.
