Slow Cooker Brisket With Caramelized Onions

- Serves: 6 persons
- 3–4 lbs beef brisket (first or flat cut)
- 3tablespoons oil
- 10cups thinly sliced onions
- 4cloves garlic (smashed)
- 1cup tomato purée
- 1cup beef stock
- ¼cup red wine vinegar
- 2tablespoons brown sugar
- ½teaspoon dried thyme
- 1tablespoon Worcestershire sauce
- 1teaspoon salt
- 1teaspoon black pepper
- Additional salt and pepper for seasoning
Step 1Season the brisket with salt and pepper.
Step 2Heat a large skillet with oil on medium-high heat and then add the brisket, browning on both sides.
Step 3Place the browned brisket into a slow cooker.
Step 4Put the sliced onions and garlic in a skillet and sauté on medium heat until onions are caramelized about 20 minutes.
Step 5In a bowl, stir together the tomato purée, stock, vinegar, sugar, thyme, Worcestershire sauce, along with additional salt and pepper if needed. Add the mixture to the skillet.
Step 6Pour the onion mixture over the brisket, and place the lid on the slow cooker. Cook on high for 5 to 5-1/2 hours.
Step 7Remove the brisket and thinly slice against the grain.
Step 8Serve with the sauce.
