Ingredients
- a littlebutter
- 250 glow-fat quark
- 300 gquinces
- 100 gbutter
- 0.3 cupsugar
- ¼ cupquince jelly
- 1 pinchsalt
- 3eggs
- 2 cupshalf-white flour
- 2 tspbaking powder
- 1 parcelbourbon vanilla sugar
- 1 tbspquince jelly
Instructions
Step 1
Line the base of a loaf tin (approx. 26 cm) with baking paper, grease the sides.Step 2
Tip the quark into a bowl, rinse out and thoroughly dry the pot, use as a measuring cup.Step 3
Rub the quince clean with a towel, peel, quarter, core and coarsely grate 200 g. Cut the rest into thin slices.Step 4
Mix the butter, sugar, quince jelly and salt in a bowl. Add the eggs, beat using the whisk on a mixer until the mixture becomes lighter in colour. Mix the flour, baking powder and vanilla, briefly mix in.Step 5
Mix in the quark and grated quince. Transfer the cake mixture to the prepared tin. Arrange the slices of quince on top.Step 6
Approx. 1 hr. 10 mins. in the lower half of an oven preheated to 180°C. Remove from the oven, allow to cool slightly then remove from the tin. Brush with the quince jelly, leave to cool on a rack.
