This classic, flavorful baked beans recipe is the ultimate barbecue and potluck side. Made with barbecue sauce and bacon, they're sure to be a hit.
- Serves: 10 persons
- 1pound dry navy beans
- 6cups water
- Pinch of baking soda
- 1bay leaf
- 6strips bacon, cut in 1/2-inch pieces or 4 ounces traditional salt pork
- 1yellow onion, diced
- ⅓cup molasses
- ¼cup packed dark brown sugar
- 1teaspoon dry mustard
- 1 ½teaspoon salt, or to taste
- ½teaspoon freshly ground black pepper
Step 1Gather the ingredients. Position a rack in the center of the oven and heat to 325 F.
Step 2In a large cast-iron skillet over high heat, add the diced Canadian bacon. Stir occasionally until the bacon has browned.
Step 3Lower the heat to medium, add the diced onion and bell pepper. Cook until softened, about 5 minutes.
Step 4Add the beans with the liquid from the cans, the brown sugar, barbecue sauce, vinegar, ketchup, mustard, and garlic powder. Stir to combine the ingredients and cook on medium-low until the mixture is bubbling.
Step 5Top the beans with the 6 slices of bacon. Transfer the skillet to the oven and bake until the mixture is bubbly, thickened, and the bacon topping is crisp, about 2 hours.
Step 6Allow to cool for a few minutes and then serve. Be careful not to stir too much to avoid breaking up the beans.
