Ingredients
- ½teaspoon sugar
- 1teaspoon lemon juice
- 2tablespoons butter
- ½cup onions (chopped)
- 1cup white wine
- 1quart demi-glace
- 2teaspoons dry mustard

Gather the ingredients.Step 2
In a small bowl, combine sugar and lemon juice, and stir until the sugar is dissolved.Step 3
In a heavy-bottomed saucepan, melt butter and cook onions over medium heat until soft and translucent. Don't let them turn brown.Step 4
Add wine . Bring to a boil, then lower the heat a bit and continue simmering until the liquid has reduced by two-thirds.Step 5
Add demi-glace, then lower heat to a simmer and reduce for about 10 minutes.Step 6
Strain through a mesh strainer.Step 7
Add mustard and the sugar-lemon mixture, and mix well. Serve immediately.
