Baked Apples with Sweet Potato Stuffing
These baked apples are stuffed with a sweet potato, pineapple and pecan filling and topped with marshmallows.
- Serves: 6 persons
- 6baking apples - peeled and cored
- ½cup cinnamon red hot candies
- 1cup water
- 1(29 ounce) can sweet potatoes, drained
- ⅓cup packed brown sugar
- ½cup crushed pineapple, drained
- ¼cup chopped pecans
- 6large marshmallows
Step 1Preheat oven to 350 degrees F (175 degrees C).
Step 2In a large pot over medium heat, combine the candies and water. Stir until candies are dissolved.
Step 3Add the apples and baste frequently until apples begin to soften. Remove from heat and allow to cool.
Step 4Mix together the sweet potatoes, brown sugar, pineapple and pecans.
Step 5Stuff the cooled apples with the sweet potato mixture. Mound any remaining mixture on top of apples.
Step 6Place in 4 quart casserole dish and bake for 20 minutes; place a marshmallow on each apple, return to oven and cook until marshmallows are golden brown.
