Ingredients
- 16ounces fresh or frozen corn kernels
- 3ounces green chile peppers, diced
- 16ounces queso fresco , shredded
- 4ounces cream cheese
- 3tablespoons chili powder
- 2tablespoons plus 1 teaspoon ground cumin
- 1 ½teaspoons salt
- 40dried corn husks
- 6cups masa harina (corn flour for tortillas or tamales)
- 5cups warm water (or low-sodium chicken broth)
- 1teaspoon chile pepper (powdered)
- 3tablespoon onion powder
- 2cups good quality pork lard (or vegetable shortening)
