Coconut and Berry French Toast Bake
Delicious and healthy way to eat French toast.
- Serves: 2 persons
- cooking spray
- 2large eggs
- 2tablespoons milk
- ½teaspoon vanilla extract
- ½teaspoon ground cinnamon
- 3slices whole wheat bread
- ½cup mixed frozen berries
- ¼cup shredded coconut
Step 1Preheat the oven to 350 degrees F (175 degrees C). Grease a small baking dish with cooking spray.
Step 2Whisk eggs, milk, vanilla, and cinnamon together in a bowl.
Step 3Cut bread slices into squares and place in the prepared baking dish. Pour egg mixture over top, making sure all bread is soaked. Sprinkle berries and coconut on top.
Step 4Bake in the preheated oven until egg mixture is set, 15 to 30 minutes; check often to make sure coconut doesn't burn.
