- 3cups grated carrots (about 3-4 large carrots)
- 1cup light brown sugar
- 3cups all-purpose flour
- 2teaspoons baking soda
- 2teaspoons ground cinnamon
- 1teaspoon salt
- 1teaspoon ground ginger
- ½teaspoon ground nutmeg
- 1 ½cups granulated sugar
- 4eggs
- 1cup vegetable oil
- 1(8 ounce) can crushed pineapple, drained
- 2teaspoons vanilla extract
- 1cup raisins

Position a rack in the center of the oven and heat to 350 F. Grease and flour two 9-inch cake pans. Set aside.Step 3
