Breakfast Pigs in a Blanket
This is a breakfast take on the classic pigs in a blanket that is made with scrambled eggs, bacon and sprinkled with cheese.
- Serves: 40 persons
- 2(8-ounce) packages crescent roll dough
- 1(14-ounce) package cocktail franks
- ¼pound bacon (about 5 slices)
- 1tablespoon unsalted butter
- ½cup shredded cheddar cheese
Step 1Gather the ingredients.
Step 2Cook the bacon in the oven or on the stovetop until crispy. Let cool slightly and chop into very small bits.
Step 3Whisk the eggs until completely combined and cook in the tablespoon of butter until cooked through.
Step 4Preheat the oven to 375 F.
Step 5Cut each crescent triangle into three smaller, long and skinny triangles.
Step 6Sprinkle each triangle with a little bacon. Place a small teaspoon of scrambled eggs on top. Then top with a cocktail frank. Roll until completely wrapped in pastry. Place the roll on an ungreased baking sheet. Sprinkle with the cheddar cheese.
Step 7Repeat steps with remaining dough and dogs.
Step 8Bake for 10 to 15 minutes or until lightly browned and crisp. Serve immediately!
