Banana mug cake
Make this easy banana mug cake in the microwave for a quick dessert for one. Add chopped pecans or chocolate chips, if you like, and drizzle with maple syrup
- Serves: 1 person
- 1banana, peeled
- 1egg, beaten
- 1tbsp vegetable or sunflower oil
- ½tsp vanilla extract
- 3tbsp maple syrup, plus extra for drizzling (optional)
- 4tbsp plain flour
- ½tsp baking powder
- 1tbsp chopped pecans or chocolate chips (optional)
Step 1Cut 2 thin slices of banana from the centre of the fruit, set aside, then mash the rest.
Step 2Tip the mashed banana into a microwave-safe mug, then stir in the remaining ingredients, except the banana slices. Microwave on high for 1 min 30 seconds-2 mins until cooked through and a skewer inserted into the middle comes out clean. Cool for 1 min, then top with the banana slices and drizzle over maple syrup, if you like.
