Buttery Cashew Brittle
This cashew brittle is made with corn syrup and sugar and butter and cashews and is a delicious alternative to peanut brittle.

Ingredients
- 1cup unsalted butter, plus more for greasing pans
- 2cups granulated sugar
- 1cup light corn syrup
- ½cup water
- 3cups cashews
- 1teaspoon baking soda
Instructions
Step 1
Line two baking sheets with foil; generously butter the foil.Step 2
Butter the sides of a large saucepan. Add the sugar, corn syrup, and water. Cook over medium heat, stirring often, until the sugar dissolves.Step 3
When the sugar mixture begins to boil, blend in 1 cup of butter. Begin to stir more frequently when the syrup reaches the thread stage, about 230 F.Step 4
When the temperature reaches 280 F (or soft-crack stage), add the cashews.Step 5
Stir constantly until hard-crack stage, 300 F, is reached.Step 6
Remove the pan from the heat and quickly stir in baking soda. Mix well.Step 7
Pour onto the prepared baking pans. As the candy cools, stretch it out thinner by lifting and pulling at edges with forks.Step 8
Loosen from the pans as soon as possible and turn over. Break up hardened candy and store in an airtight container.
