Easy Ramp Pesto
When ramps are in reason, try making this tasty, easy ramp pesto. Tastes great with pasta or on bread.
- Serves: 12 persons
- 1¼ cups ramps leaves, rinsed and dried
- 2tablespoons pine nuts
- 1clove garlic, peeled and chopped
- 10tablespoons extra-virgin olive oil
- 1¼ cups finely grated Parmesan cheese
- salt to taste
Step 1Combine ramp leaves, pine nuts, and garlic in a food processor. Process until finely chopped. With the food processor running, add olive oil and process everything until smooth. Transfer mixture to a bowl and mix in grated Parmesan cheese. Season with salt to taste.
