Shredded sprouts

Try something different with brussels sprouts at Christmas and serve them shredded with a gentle buttery garlic flavour. Pair with your favourite festive main

  1. Step 1

    Use a food processor, mandoline or knife to shred the sprouts as finely as you can, and set aside. Melt the butter in a large frying pan or wok until sizzling, then toast ½ tsp freshly cracked black pepper for 1 min. Add the garlic and sizzle for 1 min more.
  2. Step 2

    Turn up the heat and tip all the sprouts into the pan with a generous pinch of salt and a little more pepper, if you like. Stir-fry for about 5 mins. Cook until the sprouts have wilted and are starting to char, then serve straightaway or leave to cool and reheat in the microwave later.
