Dairy-Free Sweet Potato Pie (Pareve)

Ingredients
- 5medium-size sweet potatoes (peeled and cut into chunks)
- 2(9-inch) dairy-free ready-to-bake pie crusts
- 2cups soy milk
- ½cup brown sugar (firmly packed)
- 4large eggs
- 2teaspoons pure vanilla extract
- ½cup all-purpose flour
- 2teaspoons ground cinnamon
- ¼teaspoon salt

Place the sweet potatoes in a 4-quart pot and cover with cold water. Cover pot and bring to boil . Reduce heat and simmer potatoes until fork-tender, 20 to 30 minutes.Step 3
Drain the potatoes well. Use an electric mixer to beat the potatoes until smooth. Let the potatoes cool (you can refrigerate them to speed up the process).Step 4
Preheat oven to 350 F. Place the pie crusts in pie plates or tins. Crimp the edges or use the tines of a fork to create a design.Step 5
In a bowl, mix together the soy milk , sugar, eggs, and vanilla. Add the mixture to the potatoes.Step 6
In a separate bowl, mix together the flour, cinnamon, and salt. Add to the potato mixture. Mix until smooth.Step 7
Divide the sweet potato mixture evenly between the pie crusts. Level off the tops with a spatula .Step 8
Bake pies for 45 to 50 minutes, or until a knife inserted into the centers come out clean.Step 9
