    Gather the ingredients.

    Place the sweet potatoes in a 4-quart pot and cover with cold water. Cover pot and bring to boil . Reduce heat and simmer potatoes until fork-tender, 20 to 30 minutes.

    Drain the potatoes well. Use an electric mixer to beat the potatoes until smooth. Let the potatoes cool (you can refrigerate them to speed up the process).

    Preheat oven to 350 F. Place the pie crusts in pie plates or tins. Crimp the edges or use the tines of a fork to create a design.

    In a bowl, mix together the soy milk , sugar, eggs, and vanilla. Add the mixture to the potatoes.
