Crockpot Beef Tamale Pie
Crockpot beef tamale pie is an easy and delicious one dish meal recipe made with corn muffin mix plus ground beef, kidney beans, and salsa.
- Serves: 4 persons
- 1pound lean ground beef
- 1onion, chopped
- 2cloves garlic , minced
- 1green bell pepper, chopped
- 1(15-ounce) can kidney beans, rinsed, drained
- 1(8-ounce) can tomato sauce
- ⅓cup salsa
- 1tablespoon chili powder
- Salt, to taste
- Freshly ground black pepper, to taste
- 1(6-ounce) package corn muffin mix
- ⅓cup milk
- 3tablespoons melted unsalted butter
- 1egg, beaten
- 1cup shredded pepper jack cheese
- ¼cup grated Parmesan cheese
- 1(4-ounce) can chopped green chilies, undrained
- 1cup grated colby cheese
- ½cup sour cream
- ½cup salsa
Step 1Spray a 4 to 5-quart slow cooker with nonstick cooking spray; set aside.
Step 2In a large nonstick skillet, sauté the ground beef, onion, and garlic over medium heat until meat is cooked, stirring to break up meat.
Step 3Drain the meat mixture thoroughly and stir in the bell pepper, drained kidney beans, tomato sauce, salsa, chili powder, and salt and pepper to taste. Pour into the prepared crockpot.
Step 4In a large bowl, mix together the corn muffin mix, milk, butter and egg just until combined. Then add Pepper Jack and Parmesan cheeses and chilies, including chili liquid.
Step 5Spoon the corn muffin mixture over the beef in the crockpot.
Step 6Cover the crockpot and cook on low for 6 to 7 hours or until a toothpick inserted in the cornbread mixture comes out clean. Sprinkle the top with the Colby cheese and let stand for 5 minutes until the cheese melts.
Step 7In a small bowl combine sour cream, cherry tomatoes or salsa, and green onion; serve on top of the pie with cilantro or any other seasoning you prefer. If you have a new hotter cooking crockpot , check this for doneness at 5 hours.
