Cheese and Bacon Cornbread
This savory bacon and cheese cornbread recipe takes almost no time to prepare and cooks under 30 minutes.
- Serves: 8 persons
- 1package corn muffin mix
- ½cup cheddar cheese (sharp, grated)
- 6slices bacon (crisply cooked and crumbled)
- ⅓cup milk (or amount specified for mix used)
Step 1Empty corn muffin mix into a medium mixing bowl. Save about 1 tablespoon each of shredded cheese and bacon for topping; stir remaining cheese and bacon into muffin mix.
Step 2Stir in egg and milk, following label directions. Pour batter into a greased and floured 8-inch square baking dish.
Step 3Bake at 400 F for 15 minutes; sprinkle reserved cheese and bacon over top and bake 10 minutes longer, or until cornbread browned and firm.
