Grilled Pork Rib Roast Recipe

Ingredients
- 1pork rib roast (about 3 pounds)
- ¼cup olive oil
- 1tablespoon fresh lemon juice
- 2teaspoons white cooking wine
- 1tablespoon flat-leaf parsley (finely chopped)
- 1teaspoon fresh thyme leaves
- 1teaspoon fresh marjoram (finely chopped)
- 3sage leaves (roughly chopped)
- 1to 2 cloves garlic (minced)
- 1teaspoon mustard powder
- ½teaspoon sweet paprika
- ½teaspoon onion powder
- 1 ½teaspoons sea salt
- ¼teaspoon ground nutmeg
- ¼teaspoon coarse ground black pepper

Gather the ingredients.Step 2
Pat rib roast dry with paper towels. Place on a large baking sheet.Step 3
Combine olive oil, lemon, juice and wine in a small bowl. Add remaining ingredients and let the mixture sit at room temperature for 10 minutes.Step 4
Coat the entire roast with mixture. Make sure to get every inch of the meat.Step 5
Cover rib bones only with aluminum foil.Step 6
Preheat grill for medium-high heat. Place roast on grill over indirect heat and cook for 2 to 3 hours or until internal temperature at the thickest part of roast reaches 145 F / 65 C.Step 7
Once cooked, remove from heat, tent with aluminum foil and allow the roast to rest for 15 to 20 minutes before carving .Step 8
Carve pieces between the bones. This will give you a nice thick pieces of pork.
