Almond Pastry Cream
This rich almond pastry cream recipe features milk, egg yolks, and almond extract. Crème patisserie recipe.
- Serves: 6 persons
- 1 ¼cups whole milk
- 3large egg yolks
- ½cup sugar
- ⅛cup all-purpose flour
- 8teaspoons cornstarch
- 1teaspoon almond extract
Step 1Gather the ingredients.
Step 2In a small saucepan, warm the milk over low heat until it is just hot enough to steam.
Step 3While the milk is warming, whisk together the egg yolks, sugar, flour, and cornstarch until the mixture is completely smooth.
Step 4Once the milk is steaming, add half of it, whisking constantly, to the egg mixture.
Step 5Add the milk and eggs back into the hot milk, continue stirring, and heat it for 1 to 2 minutes, until the custard reaches 170 F on a digital thermometer and is very thick.
Step 6Remove it from the heat.
Step 7Stir in the almond extract.
Step 8Chill the pastry cream completely before filling the pastry of choice.
